Burgers, Veggies and Buns

Just got Gwyneth Paltrow’s new cookbook, “My Father’s Daughter” and it is wonderful.  I can’t wait to try all the recipes,  so I started with one — her veggie burger.  The mixture has black beans, sauteed onions and garlic, cumin, salt, pepper and we used parsley instead of cilantro.  It was delicious and even my husband (an ardent meat-eater) loved it.  It was fairly easy to make and the possibilities are endless what you can add to it on the bun.  We added some romaine and our favorite barbecue sauce (Gayle’s Sassy BBQ), putting it all on an organic whole wheat bun (Whole Foods has great ones).  If you’re looking for less bread, I suggest a Whole Wheat Sandwich Thin.
