Fall in a Bowl

With the weather getting colder, the appeal of cooking for the week on a Sunday is much greater than the summertime. As of late, my three favorite recipes are the Barefoot Contessa’s Winter Squash Soup, Giada’s Rustic Vegetable and Polenta Soup, and Gwyneth Paltrow’s Vegetarian Chili.  Per usual, I’ve altered the recipes some and noted how under each picture.   (Note:  For two of us, these recipes kept great in the refrigerator all week and we didn’t need to freeze anything.)

Here’s to Fall!

Substitute No-Chicken Broth for Chicken Broth and 1/2 cup Organic Soy Creamer for 1 cup Half & Half
Omit parsley and substitute 1-2 tbsp Smart Balance Light butter for 3 tbsp butter
Top with fat-free sour cream (optional) and make into 6 servings instead of 4
