I’m an ardent Food Network fan – “Barefoot Contessa” and “Giada at Home” especially. On a search to find new salad dressing recipes, I stumbled upon Eating Well‘s site. I used to read the magazine often, when I lived in San Diego, and didn’t realize all the great recipes featured on their site – which is also easy to use. (Their advanced search is killer).
I tried their Creamy Cilantro-Avocado Dressing recipe over the weekend, and it tastes almost exactly like El Torito’s, except much healthier. Added bonus – it was a breeze to make (except for chopping the cilantro).
Some tips
- I used about 1/3 cup packed cilantro (we’re not big cilantro fans, so this was the perfect amount)
- Store in an air-tight container, will last for about 3 days
- 2 tbsp is one serving, 1 tbsp is sufficient for a small side salad
