Been thinking about the Barefoot Contessa’s Cream of Fresh Tomato Soup lately and I cannot wait until tomatoes are in season again. This soup is one of my all-time favorites – and a big hit with my family.
I’ve added some twists to Ina’s original recipe – instead of chicken broth, I use “No-Chicken Broth” (any non-tomato based vegetable broth will do, as will low-sodium chicken broth). I also use 1/3 cup cream or organic soy creamer instead of 3/4 cup. For those of you who don’t eat dairy or soy, I think it will taste just as good with out the cream.
Some tips
- If you use a blender or immersion blender, I suggest draining out some of the food pulp with a sieve (the food mill does this)
- Croutons are totally optional – it’s just as delicious without
- I tried to make this a few weeks ago, and there really is a difference when the tomatoes are in season
