A few months ago, I made a version of Blueberry & Mango Quinoa Salad using Strawberries. This week, with blueberries and mango in season (and tasting great!) I made the recipe in its original form. The result – delicious! The blueberries actually mellow out the sweet flavor of the mango, all being tied together with fresh basil in the dressing. Like I mentioned in my first pass at the recipe, we used half the amount of dressing. Also, this time I added the basil in the salad, after I poured the dressing – rather than premixing it with the dressing. With today as the first official day of summer, I think this is a great recipe for the next few months – we enjoy it as a light dinner.
