Past few weeks have been more busy than usual, leaving our menu planning to be a bit more on the fly. While I’m getting excited for the Fall and return of soup for dinner – Scott has been enjoying the Summer Tomato Lentils – his favorite. Although this recipe takes about an hour to make – it leaves enough for two more meals – making it a great weeknight pick. Throw in a night of Meatless Meatball Sandwiches and a night of going out to Chipotle (our favorite) – that’s five meals in a cinch! What are your weekly dinner go-to’s?
