Transitioning to some new menu routines, and haven’t had much to post. We did make the Summer Tomato Lentils without goat cheese and mustard this week – a nice change (goat cheese was left out on purpose, mustard on accident). Definitely recommend it for an even lighter meal. At this point, we’ve made the recipe so many times – I can confirm it makes 5 servings. So with that odd last serving, we split the remaining mixture last night and put a sunnysideup egg atop. It was one of our quickest dinners to date, and left us with enough time to watch the Olympics.
Almost made this recipe for Seared Summer Squash with Egg Tacos – looks like an easy weeknight meal.
