In a sequence of I forgot to time it and the oven was set a little lower than expected, I came up with a recipe for “Beet Fries.” The recipe is loosely based on this one, because let’s be honest, everything tastes better roasted.
GOLDEN BEET FRIES (serves 2-3)
2 Golden Beets, cut into small pieces
1 tbsp. olive oil
fresh ground pepper
Preheat the oven to 375.
On a medium sized baking sheet, put your beets in one layer. Toss with olive oil and a pinch of salt and pepper. Cook for about 20-25 minutes. Check on them around the 15 and 20 minute marks to see how they’re doing. They should be a little hard, but soft after you bite into it.
