Sometimes something new for breakfast is just right. I was craving lox and while not in the mood for a bagel and cream cheese, I came up with The Lox Taco. It’s so easy to make and even more fun to eat.
The Lox Taco
To assemble – Smush some avocado on the warmed tortilla. Place tomato slice and then add a few pieces of lox, then cucumber, and capers. Drizzle with fresh lemon juice if desired. Enjoy!
