Who doesn’t love a good bowl of soup? I’ve been making this recipe for years, and been eating it for longer. My mom got the recipe from a friend a long time ago, and it’s one of the recipes everyone in our family loves. It’s so simple too, it’s easy to adjust ingredients to the flavors you prefer. Make this one on Sunday and enjoy it all week – or freeze it, that works too!
Easiest Tortilla Soup
2 tbsp canola oil
1 onion, chopped (I like using a sweet onion)
1 bag frozen corn (use 1/2 bag if you want less corn)
2 15oz. cans of black beans, rinsed and drained
28 oz. can diced tomatoes
1 packet taco seasoning (I like Mild Taco Seasoning from The Spice Hunter)
6 cups chicken broth, or no-chicken broth (vegetable broth without tomato)
Shredded cheese (or non-dairy cheese like Daiya Cheddar Block, shredded)
1. Heat a large pot, and add oil. Add onions and saute until shiny and browned a little bit.
2. Add corn, black beans, tomatoes, broth and mix in taco seasoning.
3. Heat on medium heat until hot.
4. To serve – put soup in bowl, top with 2 crushed tortilla chips, and shredded cheese.
