I have to admit we pretty much only steam vegetables when we cook them. We all seem to prefer them that way, and it’s SUPER easy. However, when I saw this recipe and it looked simple enough, I thought I’d give it a try while I already had golden raisins in the house from making the Moroccan Quinoa. It turned out pretty good, and has a little kick too (though it’s still mild enough for the little ones!). I used frozen broccoli, because it’s what I had – which meant I just needed to cook it a little longer.
Broccoli with Golden Raisins

INGREDIENTS
1 lb. frozen broccoli (or fresh, cut into florets)
3 garlic cloves, peeled & smashed
3 tbsp. olive oil
1/4 cup water
1/4 cup golden raisins
1/4 tsp. red pepper flakes
1/2 tsp. kosher salt
DIRECTIONS
In a medium pan on medium-low heat, add 3 tbsp. of olive oil until it shimmers. Add garlic cloves until they are lightly browned (about 2 minutes). Carefully remove garlic cloves with tongs and discard garlic. Add broccoli, water, raisins, red pepper flakes, and salt. Stir and cover for 3-5 minutes. Remove cover and check if broccoli is cooked. This may take a few more minutes if using frozen broccoli – watch closely, you don’t want it to be mushy. Once broccoli is steamed, serve immediately and enjoy!
