APPLE + “CHEDDAR” Q(uesadilla)
Yields 6-8 pieces per 2 tortillas
- 5-6 thin slices of Fuji apple
- 2 tortillas (we like Mission Carb Balance Fajita Size)
- 1/4 cup Daiya Cheddar Shreds
Heat a small nonstick fry pan over medium-low heat. Heat one tortilla in pan for about 30 seconds – 1 minute. Carefully add the cheddar shreds. Place the apple slices on top so that when cooked, each piece will have some apple. Place second tortilla on top. Check in about 2-3 minutes if cheese has melted. Once starting to melt, flip over for another 30 seconds to 1 minute. Remove from heat and cut into desired number of pieces. Enjoy!
